Saw a video and the guy said hat when you fake out the defender you can step on the their feet. Is this really legal?

I've been told that I can cross check someone in the back of the head and swear at the referee
and as long as I'm a Good Player on the best team all will be forgiven and the ref won't send me off!

YES
as long as over a number of years you have condition the refs that if they penlise you or your team you will react badly and you will get worse, so to have an over all calamer game and to get less abuse from you coaches and fans the ref will let it go as they do not want the game to get out of hand.
